Pancakes are not just for Shrove Tuesday, whether you are a crepe lover, or you prefer the fluffier pancake, it’s essential to combine your mixture to perfection. They pair perfectly with fresh berries and maple syrup, or lemon and sugar - whatever you fancy.
Ingredients:
- 125g plain flour
- 1 tbsp. caster sugar
- Pinch of salt
- 30g melted butter
- 2 medium eggs, beaten
- 300ml milk
- Sunflower oil for greasing
To Serve:
- Strawberries
- Blueberries
- Caster sugar
- Lemon Juice
Directions:
- Place the flour, sugar, salt, melted butter, beaten eggs and milk into a bowl. Whisk together until well combined and smooth.
- Set aside to rest the batter for half an hour.
- Heat the grill plates to a medium to high heat. Grease your cooking plates with a little sunflower oil.
- When the grill plates are hot, pour approximately 70ml of your pancake batter onto the plate. Spread out a little to create a thin layer. Cook for 2 minutes on one side and then flip. Continue to cook for a further minute.
- Serve with a scattering of berries and dust with sugar and a drizzle of lemon juice
