Pancakes are not just for Shrove Tuesday, whether you are a crepe lover, or you prefer the fluffier pancake, it’s essential to combine your mixture to perfection. They pair perfectly with fresh berries and maple syrup, or lemon and sugar - whatever you fancy.


  • 125g plain flour
  • 1 tbsp. caster sugar
  • Pinch of salt
  • 30g melted butter
  • 2 medium eggs, beaten
  • 300ml milk
  • Sunflower oil for greasing

To Serve:

  • Strawberries
  • Blueberries
  • Caster sugar
  • Lemon Juice


  1. Place the flour, sugar, salt, melted butter, beaten eggs and milk into a bowl. Whisk together until well combined and smooth.
  2. Set aside to rest the batter for half an hour.
  3. Heat the grill plates to a medium to high heat. Grease your cooking plates with a little sunflower oil.
  4. When the grill plates are hot, pour approximately 70ml of your pancake batter onto the plate. Spread out a little to create a thin layer. Cook for 2 minutes on one side and then flip. Continue to cook for a further minute.
  5. Serve with a scattering of berries and dust with sugar and a drizzle of lemon juice
