Mini Egg Pancakes

Mini Egg Pancakes

What better way to start your adventure than with fluffy, indulgent Mini Egg Pancakes? These decadent delights bring the perfect balance of soft fluffiness and chocolatey crunch. Ideal for Easter morning—or any day you deserve something special.

Ingredients

  • 240ml Milk (approx. 240g)
  • 120g Flour
  • 1 Egg
  • 1 tsp Baking Powder
  • 12g Sugar (optional)
  • ½ tsp Vanilla Extract
  • 60g Crushed Mini Eggs
  • Extra mini eggs, syrup and icing sugar for serving

Instructions:

  1. Mix the milk, flour, egg, baking powder, sugar, and vanilla until smooth.
  2. Gently fold in crushed Mini Eggs.
  3. Pour the batter into a pancake maker or pan and cook until golden brown.
  4. Top with more Mini Eggs, syrup, and a dusting of powdered sugar.

Ice Cream Mini Eggs

Mini Eggs Vanilla Ice Cream

Looking for a refreshing treat? This creamy, dreamy Mini Eggs Vanilla Ice Cream is the perfect balance of smooth vanilla flavour and crunchy chocolatey goodness. It's also super easy (and fun) to make!

Ingredients:

  • 200ml Double Cream
  • 100ml Whole Milk
  • 2 tbsp Caster Sugar
  • 1 tsp Vanilla Extract
  • 80g Mini Eggs (crushed)

Method:

  1. In a mixing bowl, whisk together the cream, milk, sugar, and vanilla until smooth.
  2. Pour into a pre-cooled ice cream machine bowl and churn for 15–20 minutes until thick and creamy.
  3. Blitz the Mini Eggs in a food processor until crushed.
  4. In the final few minutes of churning, add the crushed Mini Eggs.
  5. Transfer to a freezer-safe container and freeze for 1–2 hours for a firmer texture.
  6. Scoop, serve, and enjoy!

Mini Egg Chocolate Pots

Craving something rich and indulgent? These Mini Egg Choc Pots are bite-sized dessert heaven—think rich chocolate, crunchy Mini Eggs, and a buttery biscuit base. No oven required!

Ingredients:

  • 100g Digestive Biscuits
  • 50g Melted Butter
  • 200ml Double Cream
  • 100ml Chocolate Sauce
  • 100g Mini Eggs (plus extra for topping)


Instructions:

  1. Crush the biscuits and mix with melted butter. Press into the base of ramekins or dessert pots.
  2. Mix double cream and chocolate sauce until smooth and slightly thickened.
  3. Crush the Mini Eggs and stir into the chocolate mix.
  4. Spoon into the pots and top with extra Mini Eggs.
