Potato Tortilla

A classic Spanish dish, this Potato Tortilla is made using potatoes, eggs and onions. Quick and easy to make and ready in under 20 minutes, it makes a tasty vegetarian option for a light meal or is perfect when making tapas.

Ingredients:

  • 200ml olive oil
  • 1 medium white onion, finely sliced
  • 3 potatoes, peeled and sliced (320g approx.)
  • 3 medium eggs
  • Salt & pepper

Directions:

  1. In a medium sized, non-stick frying pan, gently heat the olive oil to a medium heat. Carefully place the sliced onionsintothe oil and spread out. Reduce the heat and allow to cook gently for 10 minutes or until tender. Stir occasionally. Carefully lift out the onions, using a slotted spoon and set aside.
  2. Turn the heat back up to medium. Add the sliced potatoes and cook until softened, but not falling apart. Remove from the pan, with a slotted spoon and allow to cool.
  3. Whisk the eggs together in a large bowl. Season with salt and pepper. Add the cooked onion and potatoes to the eggs and carefully stir, to combine everything together.
  4. Attach the omelette plates to the Grill, Waffle & Omelette Maker and set the temperature to medium. Once the green indictor light shows, place a portion of the omelette mixture into the lower plate moulds. Close the lid and cook for 8 minutes, or until golden brown. Repeat with the remaining mixture.
  5. Serve with fresh green salad leaves.
