Root Veggie Medley

This air fryer root vegetable recipe makes a delicious, easy, veggie side dish, ready in 20 mins.

Ingredients

  • 2 medium carrots, peeled and chopped
  • 1 medium beetroot, peeled and cut into wedges
  • 2 small potatoes, diced
  • 1 cup butternut squash, cubed
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried rosemary or thyme
  • Salt and pepper to taste

Preparation

  1. Preheat the air fryer to 200°C.
  2. Toss all vegetables in olive oil, garlic powder, herbs, salt, and pepper.
  3. Spread evenly in the air fryer basket.
  4. Roast at 200°C for 15-20 minutes, shaking halfway, until veggies are tender and caramelized.
