Root Veggie Medley
This air fryer root vegetable recipe makes a delicious, easy, veggie side dish, ready in 20 mins.
Ingredients
- 2 medium carrots, peeled and chopped
- 1 medium beetroot, peeled and cut into wedges
- 2 small potatoes, diced
- 1 cup butternut squash, cubed
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried rosemary or thyme
- Salt and pepper to taste
Preparation
- Preheat the air fryer to 200°C.
- Toss all vegetables in olive oil, garlic powder, herbs, salt, and pepper.
- Spread evenly in the air fryer basket.
- Roast at 200°C for 15-20 minutes, shaking halfway, until veggies are tender and caramelized.
