Roasted Carrot Fritters

Sweet, crispy, and slightly caramelised. These carrot fritters turn humble veg into a snack or side you’ll actually want to devour.

Ingredients

  • 4 large carrots (grated)
  • 1 egg
  • 4 tbsp plain flour (or chickpea flour)
  • 3 tbsp breadcrumbs
  • 1 tsp garlic powder
  • 1 tbsp grated parmesan (optional)
  • ½ tsp smoked paprika
  • Salt & black pepper
  • Olive oil spray

Preparation

  1. Squeeze excess moisture from grated carrots.
  2. Mix carrots with egg, flour, seasoning and parmesan.
  3. Shape into small patties.
  4. Place in TriZone drawer and lightly spray with oil.
  5. Air fry at 190°C for 14–16 mins, flipping halfway, until golden and crisp.
