Lemon Pepper Chicken Wings

These Lemon Pepper Wings are bright, zesty, and ultra crispy straight from the air fryer. The secret to getting that restaurant-style crunch is adding a little baking powder to the seasoning mix it helps draw out moisture from the skin so it crisps up beautifully while staying juicy inside.

Ingredients

  • 1kg chicken wings 
  • 1 tbsp olive oil 
  • 1 tsp salt 
  • 1 tsp black pepper 
  • 1–2 tsp lemon pepper seasoning 
  • 1 tsp garlic powder 
  • 1 tsp onion powder 
  • 1 tsp paprika (optional, for colour) 
  • 1 tsp baking powder (NOT baking soda) 
  • Zest of 1 lemon 
  • 1 tbsp lemon juice 
  • Fresh parsley, chopped (to finish) 

Preparation

  1. Pat the chicken wings dry with kitchen paper. Removing excess moisture is key for crispiness. 
  2. In a large bowl, add the wings along with olive oil, salt, black pepper, lemon pepper seasoning, garlic powder, onion powder, paprika, lemon zest, and lemon juice. Mix until evenly coated. 
  3. Sprinkle in the baking powder and toss again thoroughly so every wing is lightly coated. This helps create an extra crispy, golden skin in the air fryer. 
  4. Cover and marinate in the fridge for at least 1 hour for maximum flavour. 
  5. Remove the wings from the fridge 20–25 minutes before cooking to allow them to come closer to room temperature. 
  6. Place wings in a single layer in the air fryer basket and cook at 200°C for 25 minutes, shaking halfway through. 
  7. Once golden and crispy, remove from the air fryer and toss with a little extra lemon zest and fresh parsley.
