Corn Ribs
These crispy air fryer corn ribs are a simple and delicious side dish or snack. Seasoned with pantry spices and cooked until golden and charred, they're packed with sweet, smoky flavour and have the perfect crispy edges.
Ingredients
- 2 corn cobs, cut into ribs
- Olive oil spray
- Salt, to taste
- Black pepper, to taste
- 1 tsp onion powder
- 1 tsp paprika
- Chopped red onion, to serve
- Fresh parsley, chopped
- 1 lime, cut into wedges
- Spicy mayo, for dipping
Preparation
- Bring a pot of water to the boil and cook the corn ribs for 5–7 minutes until slightly tender. Drain well.
- Spray the corn ribs lightly with olive oil.
- Season with salt, black pepper, onion powder, and paprika, ensuring they're evenly coated.
- Place the corn ribs in a single layer in the air fryer basket.
- Air fry at 180°C for 15–20 minutes, turning halfway through, until the edges are charred, golden brown, and crispy.
- Transfer to a serving plate and top with chopped red onion and fresh parsley. Squeeze over plenty of fresh lime juice and serve with spicy mayo for dipping.
