Chia & Lemon Pancakes with Ricotta

Light, fresh and gently zesty — perfect for a brighter start to the day.

Ingredients

  • 2 eggs 
  • 5 tbsp cottage cheese 
  • 4 tbsp plain flour 
  • 1 tbsp chia seeds 
  • Zest of ½ lemon 
  • 1 tsp baking powder 
  • Pinch salt 

Preparation

  1. Add all ingredients to the Blast & Go Portable Blender. 
  2. Blend until smooth, then rest batter for 2 minutes to thicken. 
  3. Cook gently in a greased pan over low–medium heat.
