Carbonara

There’s a reason carbonara is a global comfort classic: it’s rich without being heavy, fast without feeling rushed, and built entirely from simple ingredients that transform into something far greater than the sum of their parts. The result is silky, glossy, deeply savoury carbonara.

Ingredients

  • 150g pancetta or guanciale, diced 
  • 300g spaghetti (or rigatoni) 
  • 3 egg yolks + 1 whole egg 
  • 75g pecorino romano (or parmesan), finely grated 
  • Freshly cracked black pepper 
  • 600ml water (or light stock) 
     

Preparation

  1. Heat your Cuisinart Clickmart pan over medium heat. Add pancetta and cook until golden and crisp. Scoop out and set aside, leaving the rendered fat in the pan. 
  2. Add the pasta, water, and a pinch of salt. Bring to a simmer, stirring so the pasta doesn’t stick. Cook until just tender and most of the liquid has been absorbed. 
  3. Whisk together the egg yolks, whole egg, cheese, and plenty of black pepper. 
  4. Take the pan off the heat. Quickly stir in the egg mixture—the residual warmth creates a silky sauce without scrambling. 
  5. Return the pancetta to the pan and toss until everything is glossy and creamy. 
  6. Serve straight from the pan with extra cheese and black pepper. 
  7. To store: let it cool, cover, and keep it in the same pan. Reheat gently with a splash of water.
