Ingredients

For the filling:

  • 150g mixed dried fruit, finely chopped
  • 100g light muscovado sugar
  • 1 orange, zested
  • 175ml hot black tea

For the ice cream:

  • 200g Carnation Sweetened Condensed Milk
  • 500ml whipping cream
  • 1 tsp vanilla paste
  • 1 tsp mixed spice

Preparation

  1. Tip the chopped dried fruit, sugar & orange zest into a heatproof bowl. Pour over the hot tea, stir together and leave to soak for a few hours (or even better, overnight).
  2. For the ice cream, in a large jug thoroughly whisk together the condensed milk, cream, vanilla and spices until completely smooth and unified.
  3. Divide the liquid base evenly across the three dessert cups (around 218ml per cup) – ensure the mixture stays below the MAX fill line on each container. Cover and freeze on a level surface for at least 24 hours at –18 °C or colder.
  4. Remove from the freezer and let sit at room temperature for 5 minutes before churning. Assemble mixing assembly and then power handle. Select Ice Cream and process once.
  5. Thoroughly drain the fruit and add 2 tbsp to each container (adding more than this may cause overflow!). Select Mix-in and process once. Repeat with the other containers then serve and enjoy!
