Apple and Blueberry Cobbler

A bubbling, golden‑topped cobbler that brings together soft apples and burst‑blueberries in one jammy, comforting spoonful. Simple to make, impossible to resist, and best served warm with a melting scoop of ice cream.

Ingredients

Filling:

  • 2 apples, peeled & sliced
  • 150g blueberries
  • 60g sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla
  • 1 tbsp cornflour

Topping:

  • 120g flour
  • 1½ tsp baking powder
  • 40g sugar
  • 60g cold butter, cubed
  • 80ml milk
     

 

Preparation

  1. Add apples, blueberries, sugar, lemon, vanilla, and cornflour to a pan.
  2. Cook gently for 5–8 minutes until the fruit softens and becomes jammy.
  3. Rub butter into the flour, baking powder, and sugar.
  4. Stir in the milk to make a soft dough.
  5. Spoon the dough over the fruit.
  6. Bake at 180°C for 30–35 minutes until golden and bubbling.
  7. Serve straight from the pan (ice cream recommended).
  8. Cool and refrigerate any leftovers.
