Air Fryer Filo Feta Bites

Let me show you how I turn a few simple ingredients into the crispiest little feta bites. They’re packed with spinach, peas and broccoli, but you’d never know it! Just blend, wrap in filo and pop them in the air fryer until golden and crispy.

Ingredients

  • Filo pastry sheets 
  • 100g feta cheese 
  • 1 handful spinach 
  • 75g peas, thawed 
  • 75g broccoli, lightly steamed 
  • 1 tbsp Greek yoghurt 
  • ½ tsp garlic granules 
  • ½ tsp Italian seasoning 
  • Olive oil spray 

Preparation

  1. Cook the broccoli first: Steam or boil the broccoli for around 3–4 minutes until just tender. Drain well and allow to cool slightly. 
  2. Add the cooked broccoli, spinach, peas, feta, Greek yoghurt, garlic granules and Italian seasoning to a food processor. 
  3. Blend until combined but still slightly textured. If the mixture seems wet, add a little more feta. 
  4. Cut the filo pastry into smaller squares and lightly spray each sheet with olive oil. 
  5. Add a spoonful of the feta and vegetable mixture to the centre of each square. Fold into little parcels, making sure the filling is enclosed. 
  6. Place in the air fryer basket, seam-side down, and lightly spray with oil. 
  7. Air fry at 180°C for 8–10 minutes, or until golden, crisp and cooked through. 
  8. Allow to cool for a couple of minutes before serving  the filling will be hot!
