Vegetable Soup

Try this warming Vegetable Soup recipe, to create a delicious, quick and easy lunch or supper. It can be ready in about half an hour and is a great way of using up any leftover veg you have at home.

Ingredients:

  • 1kg mixed vegetables (such as pumpkin, turnip, courgette, carrot and onion), peeled, topped and tailed and cut to fit the feed tube
  • 4 tbsp. olive oil
  • 2 garlic cloves, crushed
  • 4 sprigs thyme
  • 1 litre chicken or vegetable stock
  • Salt and black pepper

To Serve:

  • Crème fraiche
  • Crusty bread

Directions:

  1. Using the Expert Prep Pro, set up the large work bowl with the dicing grid and disc.
  2. With the processor on high, dice the vegetables.
  3. Add the olive oil to a large, deep sided pan and gently sauté the garlic.
  4. Add the diced vegetables and thyme. Continue to sauté for 10 minutes, until the vegetables begin to soften.
  5. Add the stock and bring to the boil. Turn down to simmer for 10 minutes or until the vegetables are cooked through.
  6. Allow to cool slightly. Using the Cordless Pro Hand Blender, with the blending attachment, blend the soup until it has a smooth consistency. Adjust the seasoning to taste.
  7. Serve with crusty bread and crème fraiche.
