Vegetable Patties

These Vegetable Patties are easy to make and can be ready in about 20 minutes. They are a great vegetarian option for either a tasty snack or a delicious light lunch, when paired with a salad.

Ingredients:

  • 200g potatoes
  • 200g sweet potatoes
  • 200g carrots
  • 2 eggs
  • 3 tbsp. plain flour
  • 5 parsley sprigs
  • 3 garlic cloves
  • 1 tsp. curry powder
  • Salt and pepper

To Serve:

  • Fresh salad leaves

Directions:

  1. Using the medium grating disc in the Easy Prep Pro, grate the potatoes and then squeeze them, to remove the water.
  2. Then grate the carrots and the sweet potato. Mix everything together in a bowl and set aside.
  3. Chop the parsley and garlic and add this to the grated vegetables, along with the eggs, flour and spices.
  4. Mix everything together, until fully combined and season to taste.
  5. Using the grill plates, preheat the Griddle & Grill to 200˚C.
  6. Place a tablespoon of the mix on the grill plate, close the lid and cook for 3 minutes. Repeat this process until all the mixture has been used.
  7. Serve the vegetable patties hot, with a salad.
