Vegan Apple Pudding

Our Apple Pudding (Tatin Style) is the perfect after-dinner treat. It’s also completely dairy free, making it a great vegan option too.
Ingredients
- 5 organic apples
- 40g coconut oil
- 50g brown sugar
- 300g plain flour
- 120g coconut sugar
- 1 sachet baking powder
- A pinch of salt
- 200g apple sauce
- 170ml vegetable milk
- 100ml vegetable oil
Preparation
- Peel, core and cut the apples into wedges.
- Place the cooking pan on the Cook In and set the temperature to medium.
- Using the brown sugar and coconut oil, make a caramel in the pan.
- Add the apple wedges to the pan and cover with the lid. Cook the apples for 1 minute and turn the apples over. Cook for another minute and then switch the Cook In off.
- Pour the flour, coconut sugar, baking powder and salt into a mixing bowl and mix well, to combine the ingredients.
- Add the apple sauce, vegetable milk and vegetable oil and mix into a smooth batter.
- Pour the batter over the caramelized apples and replace the lid.
- Set the Cook In to a low heat and bake for 35 minutes, with the lid on.
- Once cooked, leave to cook down and turn out onto a dish.
