Thai Basil Pork

Thai Basil Pork is a common street food dish served in Thailand. It’s easy to make, can be ready in less than half an hour and is usually served with fresh rice.

Ingredients

  • 2 cloves garlic, peeled
  • 2 medium red chillies, de-seeded & roughly chopped
  • 2cm cube fresh ginger, peeled & roughly chopped
  • 1 tbsp. groundnut oil
  • 500g pork mince
  • 1 tbsp. fish sauce
  • 1 tbsp. light soy sauce
  • 1 tbsp. ketjap manis
  • 1 tbsp. oyster sauce
  • 4 tbsp. water
  • Handful Thai basil leaves, roughly torn

To Serve:

  • Jasmine rice
  • Stir fried vegetables

Preparation

  1. Place the garlic, red chillies, ginger and groundnut oil into the Spice Grinder. Process until it comes together as a paste.
  2. Using the cooking pan, set the temperature of the Cook In to low-medium and gently fry the spice paste for a couple of minutes.
  3. Turn the heat up to medium-high and add the pork mince. Stir fry for a few minutes, until cooked.
  4. Mix together the fish sauce, soy sauce, ketjap manis, oyster sauce and water in a small jug.
  5. Add the sauce to the cooked pork and stir well. Continue to cook until the sauce has evaporated, and the meat has coloured. Stir through the Thai basil leaves, just before the end of the cooking time.
  6. Serve with stir fried vegetables and jasmine rice. (See recipe for Thai Inspired Rice)
