Sausage and Broccoli Calzones

Ingredients
250g broccoli florets, steamed
800g sausage meat
60g mozzarella
30g pecorino cheese
3 tbsp ricotta cheese
Flour, for dusting
450g pizza dough
Water, for sealing
Olive oil, for brushing
Preparation
1. Steam the broccoli florets, then pulse in a food processor to evenly chop.
2. Brown the sausage meat, then leave to cool in a bowl.
3. Shred the mozzarella and pecorino cheese and combine in a bowl with the chilli.
4. Add the cooled sausage meat, broccoli and ricotta to the mix, and combine altogether.
5. Preheat the pizza oven to 350°C.
6. Divide the pizza dough into 4 pieces and stretch each piece into approximately 7 x 3½-inch-long.
7. On a well-floured peel, add a quarter of the filling mix into the centre of each.
8. Brush the outer edges of the bottom dough half with water and pull the top half over to cover the filling. Firmly press down around the dough edges to seal and brush the calzones with oil.
9. Once the pizza Oven is to temperature, add the calzones and bake for 15minutes until well browned and the filling is hot.
10. Remove from oven with a pizza peel and let rest for at least 5 minutes before serving.
