Roast Salmon with Green Vegetables

Roast Salmon is easy to make and can be ready in less than 20 minutes. It’s also high in omega-3. Pair it with vegetables, pasta or salad for a delicious lunch or mid-week dinner option.

Ingredients:

  • 4 salmon fillets
  • 20g melted butter
  • 1 bunch asparagus, trimmed and halved (approx. 200g)
  • 200g green beans, trimmed
  • 50g pitted black olives
  • 20g flaked almonds
  • Sea salt and pepper
  • Olive oil

For the Vinaigrette:

  • 125ml olive oil
  • 2 tbsp. sherry vinegar
  • Juice 1 lemon
  • 1 clove garlic, crushed
  • 2 tsp. honey
  • Sea salt and pepper

To Serve:

  • Lemon wedges
  • Fresh dill

Directions:

  1. 1. Prepare the vinaigrette, by mixing all the ingredients together. Set aside.
  2. 2. Brush both sides of the salmon fillets with the melted butter and place on the baking tray, before adding the asparagus, green beans, black olives and flaked almonds, so that they are evenly spread out around the tray. Drizzle olive oil over the vegetables and season with salt and pepper.
  3. 3. Place the baking tray into rack position 2. Set to grill, at 210˚C, for 15 minutes.
  4. 4. Cook, until the salmon is opaque. The internal temperature should be 50˚C. The vegetables should be slightly al dente.
  5. 5. Serve the salmon, with a mix of the vegetables. Drizzle over the vinaigrette and add some lemon wedges and dill.
