Prawn Skewers

These delicious Prawn Skewers are simple to make and full of flavour. Perfect for a quick and easy mid-week dinner or when entertaining friends.

Ingredients:

  • 24 Madagascan raw king prawns, shell on
  • 12 wooden skewers
  • 1 medium courgette, cut into rounds
  • 1 yellow pepper, de-seeded and cut into chunks
  • 1 red pepper, de-seeded and cut into chunks
  • 4 large tomatoes, sliced through the middle

For the Dressing:

  • 6 tbsp. olive oil
  • 2 tbsp. lemon juice
  • 2 tbsp. finely chopped parsley
  • Salt and pepper

To Serve:

  • Green salad

Directions:

  1. Place all the dressing ingredients into a deep bowl and whisk until well combined.
  2. Assemble the skewers by threading 2 prawns onto each skewer and brushing generously with the prepared dressing. Set aside.
  3. Add the prepared vegetables to the remaining dressing and stir until the vegetables are well coated.
  4. Preheat both sides of the Entertaining Grill to 180˚C.
  5. Once up to temperature, add the vegetables to one side of the Entertaining Grill, spreading them out evenly. Cook for approximately 20 minutes, turning occasionally, until beginning to soften and brown.
  6. With approximately 6 minutes remaining for the vegetables, place the prawn skewers onto the other side of the Entertaining Grill. Cook for 2 to 3 minutes, before turning them over and cooking for a further 2 to 3 minutes.
  7. Place everything on a sharing platter and serve with a green salad.

Tip: Pre soaking the wooden skewers for 1 hour will prevent them from burning, during cooking.
