Pilaf is a versatile, easy to make, one-pot rice dish, which can be made with a variety of ingredients. Follow our recipe, for a simple vegetarian version, that is perfect for midweek dinners.

Ingredients:

  • 250g basmati rice
  • 3 shallots, peeled & finely sliced
  • 1 tbsp. olive oil
  • 1 cinnamon stick
  • 3 cloves
  • 30g golden raisins
  • 50g pine nuts
  • 1 tbsp. zaatar spice
  • 2 strips lemon zest
  • ½ tsp. salt
  • ¼ tsp. ground black pepper
  • 500ml vegetable stock, warmed
  • 25g parsley, chopped
  • 25g coriander, chopped
  • 25g toasted almond flakes
  • 2 tbsp. pomegranate seeds

Directions:

  1. Wash the rice well in cold water and soak for 20 minutes, before rinsing thoroughly and allowing to drain.
  2. Place the sliced shallots into an appropriate oven proof dish, then add the oil, cinnamon and cloves. Stir to combine. Put into the Air Fryer Mini Oven, using the oven rack or baking tray, in rack position 1 or 2, depending on the size of your baking dish. Set to roasts & pizzas, at 180˚C, for 15 minutes and bake until the shallots soften and start to colour.
  3. Remove from the oven and stir to combine. Add the raisins, pine nuts, zaatar, lemon zest, salt, pepper and basmati rice. Stir thoroughly and pour in the warmed stock. Stir again, before covering with aluminium foil and placing back in the oven. Set the timer for an additional 25 minutes, at 180˚C.
  4. Remove from the oven and allow to stand, covered, for 10 minutes.
  5. Fluff up the rice with a fork and remove the lemon peel and cinnamon stick, before serving.
  6. Garnish with parsley, coriander, toasted almond flakes and pomegranate seeds.
