Mixed Seed Soda Bread

Mixed Seed Soda Bread, infused with orange zest, is easy to make and is the perfect treat to have with your morning coffee or tea.

Ingredients:

  • 450g plain flour
  • 2 tbsp. sunflower seeds
  • 1 tbsp. sesame seeds
  • 2 tbsp. poppy seeds
  • 2 tbsp. soft brown sugar
  • 1 tbsp. freshly grated orange zest
  • 1 heaped tsp. bicarbonate of soda
  • 1 heaped tsp. cream of tartar
  • 1 tsp. salt
  • 500ml buttermilk
  • Melted butter for brushing the top

Directions:

  1. Preheat the oven to 200 ̊C / 190 ̊F / gas mark 6. Line a loaf tin with greaseproof paper.
  2. Sift the flour into a large bowl, before adding the rest of the dry ingredients. Using your hand mixer, on a low speed, gently mix your dry ingredients together. Make a well in the centre and pour in the buttermilk. Gently mix on a low setting to bring everything together, to form a soft dough. Take care not to over mix.
  3. Place the dough into the prepared loaf tin and spread evenly. Brush the top with the melted butter.
  4. Place in the oven and bake for 30 minutes, before turning down to 150 ̊C / 140 ̊F / gas mark 2 for a further 15 minutes, or until a skewer inserted into the loaf comes out clean.
  5. Allow to cool for a couple of minutes, before turning out onto a wire rack.
  6. Serve warm, spread with butter.
