Grilled Salmon with Grilled Tomatoes & Potatoes

Grilled Salmon is high in omega-3 and is easy to make. This simple recipe makes an ideal mid-week dinner and can be ready in less than half an hour.

Ingredients:

  • 500g new potatoes, pre-cooked and finely sliced
  • 240g mixed cherry tomatoes on the vine
  • 2-3 sprigs fresh thyme
  • Sea salt & freshly ground black pepper
  • Juice ½ lemon
  • Olive oil
  • 3-4 salmon fillets

Directions:

  1. Place the sliced potatoes, tomatoes and thyme on the baking tray. Season with salt and pepper and drizzle over the olive oil and lemon juice.
  2. Place the baking tray into the oven, on rack position 2. Set to grill at 210˚C, for 15 minutes. Grill until the vegetables are starting to colour.
  3. Rub each salmon fillet with olive oil and season.
  4. Remove the baking tray from the oven and turn over the vegetables. Add the salmon fillets to the baking tray, amongst the vegetables and grill for a further 10 - 12 minutes. Cook until the salmon is opaque and the vegetables are coloured and starting to crisp slightly.
  5. Serve the salmon with the grilled vegetables and a squeeze of lemon juice.
