Gingerbread Biscuits
15 to 20 biscuits
Gingerbread Biscuits are a fun and delicious way to get the whole family involved in some baking at the weekend. They are also a great recipe to enjoy during the festive period or all year round.
Ingredients
- 175g plain flour
- ½ tsp. bicarbonate of soda
- 1 tbsp. ground ginger
- ½ tsp. cinnamon
- Pinch of sea salt
- 160g soft brown sugar
- 100g butter, cubed
- 1 medium egg
For the Icing:
- 100g icing sugar, sieved
- Silver Balls
Preparation
- Preheat the oven to 180 ̊C / fan 160 ̊C / gas mark 4. Line 2 baking trays with greaseproof paper.
- Place the flour, baking powder, ginger, cinnamon, salt and sugar into the large bowl of your food processor. Pulse briefly to combine the dry ingredients.
- Add the butter and egg and pulse briefly, before processing continually, until the mixture starts to form a ball.
- Tip the dough onto a lightly floured work surface and bring together to form a ball. Wrap in cling film and chill in the fridge for 15 minutes.
- Using the lightly floured work surface, roll out the dough to a thickness of 5mm. Using cookie cutters, cut shapes and place on the baking trays. From leftover dough into a ball and re-roll and repeat, cutting out until all the dough has been used.
- Bake for 12 minutes. Cook on a wire rack.
- Make the icing by adding 1-2 tsp. water to the icing sugar, until it reaches desired consistency. Spoon into a piping bag, fitted with a small nozzle. Pipe decorations on the biscuits and add silver balls.
