Dairy Free Strawberry & Banana Soft Serve Ice Cream

Servings: 4 - 6
Prep. Time: 15 minutes + 4 hours chill time
Cook Time: 14 - 16 minutes

Ingredients:

  • 500g fresh strawberries, hulled and halved
  • 2 medium ripe bananas
  • 100ml almond milk
  • 100ml dairy free cream
  • 5 tbsp. maple syrup
  • Juice of ½ lemon

To Serve:

  • 150g fresh strawberries, diced

Directions:

  1. Add the strawberries to a large blender or food processor and process until smooth.
  2. Pass through a fine sieve to remove all the pips. You should have approximately 400ml strawberry puree.
  3. Return the strawberry puree to the blender and add all the remaining ingredients and blend well. Cover and chill for a minimum of four hours or overnight.
  4. When ready to make your soft serve ice cream, stir the chilled ice cream base. Add the frozen freezer bowl to the ice cream maker, turn on and pour in the chilled ingredients.
  5. Churn the ice cream base for 14-26 minutes. The soft serve is ready when it dispenses as a continuous thick ribbon.
  6. Serve into cones or bowls, sprinkling on the freshly diced strawberry pieces.
