Crunchy Pizza

Crunchy pizza is perfect for a light snack, enjoyed out in the sun, or to share as a starter. It tastes delicious with a range of toppings, such as sundried tomatoes, courgettes and basil.

Ingredients:

  • 300g plain flour
  • 200ml warm water
  • 1 sachet baking powder
  • 1 tsp. salt
  • 30ml olive oil
  • 40g fresh baby spinach
  • 100g artichoke hearts in oil
  • 100g sundried tomatoes
  • 100g ricotta cheese
  • 80g courgette, sliced
  • 80g asparagus, thinly sliced
  • 50g mushrooms, chopped
  • 40g pine nuts

Directions:

  1. Add the baking powder to the warm water and mix thoroughly.
  2. Place the flour and salt into the bowl of the food processor. Then add the olive oil and the water / baking powder mix.
  3. Process, on a low speed, for approximately 40 seconds.
  4. Remove the dough from the bowl and shape into a ball. Cover with a bowl and let it rise for 1 hour.
  5. Divide the dough into 8 balls and roll out with a rolling pin. Set aside for 30 minutes.
  6. Pre-heat the grill to 200˚C (MEDIUM to HIGH).
  7. Pre-bake the pizza dough for 3 minutes and set aside. Brush each pre-baked pizza base with the ricotta cheese.
  8. Add some of each topping, to 4 of the pre-baked bases. Then top each one with the remaining dough.
  9. Then bake in the grill for approximately 4 minutes.
  10. Cut each pizza in half and serve hot.
