Chocolate Soft Serve Ice Cream

Servings: 4 - 6
Prep. Time: 5 minutes + 4 hours chill time
Cook Time: 18 - 20 minutes

Ingredients:

  • 60g unsweetened cocoa powder
  • 80g granulated sugar
  • 30g brown sugar
  • 210ml full fat milk, chilled
  • 410ml double cream, chilled
  • 1 tsp. vanilla extract

Directions:

  1. Add the cocoa powder and sugars into a medium bowl. Using a hand mixer or whisk, thoroughly combine, removing as many lumps as possible Add the milk, cream and vanilla extract and whisk together until the sugar and cocoa powder have fully dissolved and you have a smooth mixture.
  2. Cover and chill for a minimum of four hours or overnight.
  3. When ready to make your soft serve ice cream, stir the chilled ice cream base. Add the frozen freezer bowl to the ice cream maker, turn on and pour in the chilled ingredients.
  4. Churn the ice cream base for 16-18 minutes. The soft serve is ready when it dispenses as a continuous thick ribbon.
  5. Serve into cones or bowls, adding toppings if required, whilst dispensing the ice cream.
