Avocado & Lime Sorbet

Avocado and Lime Sorbet tastes delicious topped with crushed pistachios, dark chocolate and biscuit crumbs. It’s a great recipe try if you fancy something new.


  • 4 ripe avocados
  • 4 limes
  • 150ml water
  • 50g brown sugar
  • 40g pistachios, crushed
  • 2 tbsp. vegan coconut yoghurt
  • 2 squares of 80% dark chocolate
  • 4 biscuits of your choice


  1. The day before, place the bowl of the Ice Cream Maker in freezer.
  2. Boil the sugar and water in a saucepan, to make a syrup. Set aside to cool.
  3. Peel the avocados, remove the stone and put the flesh in a bowl.
  4. Zest a lime and set aside.
  5. Squeeze the limes and add the juice to the bowl, with the avocado flesh. Then add the cold syrup and yoghurt.
  6. Attach the blending shaft to the Cordless Pro Hand Blender and blend the ingredients together, until smooth
  7. Pour the mixture into the bowl of the Ice Cream Maker and churn for approximately 20 minutes.
  8. Add the crushed pistachios towards the end of the churning process.
  9. Shape the sorbet into quenelles with a tablespoon and then arrange in cups.
  10. Sprinkle with the grated lime zest, some dark chocolate and some biscuit crumbs.
  11. Serve immediately.
