Aubergine Skewers

These Aubergine Skewers are simple to put together and are great for cooking on the BBQ - they are also a great vegetarian option too. Simply serve with a side salad for a quick and easy meal.

Ingredients:

  • 2 aubergines, thinly sliced
  • 1 tbsp. coarse sea salt
  • 2 red onions, each segmented into 8 pieces
  • 8 skewers

For the Paste:

  • 1cm piece cinnamon stick
  • 1 tsp. paprika
  • 1 tsp. chilli flakes
  • 2 garlic cloves
  • 1 tsp. honey
  • 2 tbsp. pomegranate molasses
  • 6 tbsp. olive oil
  • Fresh ground black pepper, to taste

To Serve:

  • Grilled lemon halves
  • Sliced spring onions
  • Pomegranate seeds

Directions:

  1. Evenly scatter the coarse sea salt over the sliced aubergines. Allow to drain for half an hour, over a colander. Rinse and pat dry.
  2. Place the paste ingredients into the Spice Grinder and blend together.
  3. Heat the Entertaining Grill to 160˚C.
  4. Brush the paste over the aubergine and onion, before threading them onto the skewers. Allow three aubergine slices and two onion pieces per skewer.
  5. Once the grill is ready, place the skewers on and cook for 15 to 20 minutes, turning occasionally to ensure even cooking. Brush with a little more marinade, if they begin to dry out.
  6. Serve with grilled lemon halves, fresh pomegranate seeds and spring onions.
