After School Skinny Pizza Pockets

Ingredients:

  • 2 Whole-wheat wraps
  • 1 Tablespoon of tomato puree
  • 1 Tomato
  • Half a ball of fresh mozzarella
  • A handful of fresh spinach
  • 2 Slices of good quality ham
  • Olive oil

Directions:

  1. Turn on Sandwich Maker and heat to High.
  2. Place a wrap in front of you and spoon 1/2 a tablespoon of tomato puree over each wrap. Lay down a slice of ham in the middle, top with the fresh spinach, mozzarella and a couple of slices of tomato on each wrap.
  3. Bring all four sides into the centre to create a rectangle (matching the shape of a piece of bread) making sure there is no gap in the middle.
  4. Once the machine is pre-heated, spray or brush the sandwich plates with oil and pop the wrap in.
  5. Cook for 5-7 minutes until lightly browned and carefully remove from the plates. Cut in half and serve immediately.
