Vegetable Lasagne

Chop, grate and layer your way to a hearty, homemade Vegetable Lasagne, without the stress.

Ingredients

  • 1 courgette
  • 1 carrot
  • 1 red pepper
  • 1 onion
  • 2 garlic cloves
  • 400g tin chopped tomatoes
  • 1 tbsp tomato purée
  • 1 tsp dried oregano
  • Salt & pepper
  • Olive oil
  • 6-8 lasagne sheets
  • 300ml béchamel sauce (jarred or homemade)
  • 150g cheddar cheese

Preparation

  1. Grate courgette, carrot, and red pepper using the reversible grating disc.
  2. Switch to the chopping blade, and chop the onion and garlic. Pulse until finely chopped.
  3. Sauté onion and garlic in olive oil. Add grated veg, chopped tomatoes, tomato purée, oregano, salt, and pepper and simmer for 15 minutes.
  4. Fit the grating disc again and grate cheddar cheese (no mess, no effort!)
  5. In an oven-safe dish, layer tomato veggie sauce, lasagne sheets, béchamel, and grated cheese. Repeat until all ingredients are used.
  6. Air Fry (20-25mins) or Oven Cook (35-40mins) at 180°C until golden and bubbling
