Air fryer tofu is one of the easiest and most satisfying ways to enjoy this humble ingredient. Whether you're after thick-cut tofu steaks, popcorn-style bites, or bacon-like crispy bits, this recipe has you covered. It’s high in protein, naturally gluten-free, and great in bowls, wraps, salads or on its own as a snack. The marinade gives the tofu a rich umami flavour with a lovely balance of sweet and sour.

Ingredients

For the Tofu:

  • 3 x 400g blocks firm tofu
  • 3–6 tsp cornflour (optional, for added crisp)
  • Spray oil (optional)

For the Marinade (x3 for all versions):

  • 135ml (9 tbsp) tamari
  • 90ml (6 tbsp) maple syrup
  • 45ml (3 tbsp) apple cider vinegar
  • 45ml (3 tbsp) toasted sesame oil

Tip: If you're only doing one version, divide the marinade by 3.

Preparation

Prepare Your Tofu & Marinade

  1. Press each block of tofu for 10–15 minutes to remove excess moisture.
  2. Slice or tear depending on version (see below).
  3. Whisk together the marinade and divide evenly between the tofu portions. Let each sit for at least 10 minutes.

Tofu Steaks (Thick-Cut)

  1. Slice tofu into 1–1.5cm thick steaks.
  2. Pat dry and marinate well.
  3. Optionally, dust lightly with cornflour and spray with oil.
  4. Air fry at 200°C for 15–18 minutes, flipping halfway.
  5. Result: meaty texture, golden outside, soft interior. Perfect in wraps or with sauces.

Popcorn Tofu (Torn Chunks)

  1. Tear tofu into irregular bite-sized pieces.
  2. Marinate, then toss in a little cornflour or seasoning for extra crunch.
  3. Air fry at 200°C for 12–15 minutes, shaking halfway.
  4. Result: chewy-crispy nuggets with loads of surface area. Great for dipping or as party food.

Crispy Tofu Bacon Bits (Thin-Sliced)

  1. Slice tofu thinly and evenly (around 2–3mm thick) using a mandolin or sharp knife.
  2. Briefly marinate, or cook plain and toss in sauce after.
  3. Preheat air fryer to Max Crisp or 200–210°C.
  4. Lay slices in a single layer and air fry for 10–12 minutes—watch closely to avoid burning.
  5. Result: ultra-crispy, savoury, bacon-like tofu perfect for topping salads or adding crunch to bowls.
