Steamed Asparagus with Soft Boiled Egg

Steaming is a quick and healthy way to cook asparagus and helps to retain nutrients, vitamins and colour. Try it served with these steamed soft-boiled eggs for a healthy lunch or a light brunch.


  • 500g green asparagus (peeled)
  • 3 fresh eggs
  • 3 spring onions (chopped)
  • 2 tbsp. flat-leaf parsley (chopped)
  • 2 tbsp. black olives
  • 2 tbsp. candied tomato pieces
  • 1 candied lemon in strips and it’s juice
  • 2 tbsp. ground pistachio
  • Salt and freshly ground pepper


  1. Add the eggs to the Cuisinart Professional Glass Steamer and set the timer for 10 minutes.
  2. Add the asparagus to the Steamer, when there is around 5 minutes remaining on the timer.
  3. Remove the eggs and peel. Arrange the asparagus on a plate.
  4. Arrange the candied tomatoes, onions, olives, candied lemon, pistachio powder, parsley and season.
  5. Add the egg and cut it in half.
  6. Sprinkle with the juice of the lemon and a little olive oil.
