Spinach & Mascarpone Pasta
For a quick lunch or midweek meal try this quick and easy recipe for Spinach & Marscapone Pasta. Made with just a few simple ingredients, you can have this on the table in under 15 minutes.
Ingredients
- 400g spiral pasta
- 250g baby spinach
- 2 cloves garlic, peeled & crushed
- 250g tub mascarpone
- Juice & zest 1 lemon
- 30g grated parmesan, plus extra to serve
- 50g pine nuts, lightly toasted
Preparation
- Cook the pasta following the manufacturers instructions.
- Put half of the spinach into a large bowl with the garlic, mascarpone, lemon juice and zest. Using your hand blender whizz all the ingredients into a smooth sauce. Season to taste.
- Drain the pasta thoroughly and return to the pan on a low heat. Add the sauce and stir in, along with the pine nuts and remaining spinach. Allow the spinach to wilt down, stir and check for seasoning.
- Serve with parmesan on top.
