Spinach & Mascarpone Pasta

For a quick lunch or midweek meal try this quick and easy recipe for Spinach & Marscapone Pasta. Made with just a few simple ingredients, you can have this on the table in under 15 minutes.

Ingredients

  • 400g spiral pasta
  • 250g baby spinach
  • 2 cloves garlic, peeled & crushed
  • 250g tub mascarpone
  • Juice & zest 1 lemon
  • 30g grated parmesan, plus extra to serve
  • 50g pine nuts, lightly toasted

Preparation

  1. Cook the pasta following the manufacturers instructions.
  2. Put half of the spinach into a large bowl with the garlic, mascarpone, lemon juice and zest. Using your hand blender whizz all the ingredients into a smooth sauce. Season to taste.
  3. Drain the pasta thoroughly and return to the pan on a low heat. Add the sauce and stir in, along with the pine nuts and remaining spinach. Allow the spinach to wilt down, stir and check for seasoning.
  4. Serve with parmesan on top.
