BBQ-Marinated Chicken Thighs with Sweet Potato, Broccoli and Quinoa

Ingredients

For the chicken thighs:

  • 4 bone-in, skin-on chicken thighs
  • 100ml BBQ sauce 
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt & pepper to taste

For the sweet potato and broccoli:

  • 1 head of broccoli, cut into florets
  • 1 medium sweet potato, cut into wedges
  • 1 tbsp olive oil
  • Salt, pepper, garlic powder, paprika to taste

Preparation

For the chicken thighs: 

  1. Marinate: Mix BBQ sauce, olive oil, and seasonings in a bowl. Coat chicken thighs thoroughly. Cover and marinate for at least 30 minutes, or up to 24 hours in the fridge.
  2. Roast at 190°C for 20-22minutes
  3. Tip: Flip halfway through and brush with extra BBQ sauce for a sticky glaze.

For the sweet potato and broccoli:

  1. Toss veggies in olive oil and seasonings.
  2. Air Fry at  200°C for 15–18 minutes. Shake halfway.
