Baked Sweet Potato with Garlic Mushrooms & Spinach Topping

If you're stuck on what to make for lunch today, here’s a quick and tasty idea using your dual drawer air fryer - perfect for a cosy autumn lunch!

Ingredients

  • 2 medium sweet potatoes
  • Olive oil spray
  • Sea salt
  • 200g mushrooms, sliced
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • Handful of baby spinach
  • Salt and pepper to taste

Preparation

  1. Scrub and dry the sweet potatoes.
  2. Prick each one a few times with a fork.
  3. Lightly spray with olive oil and sprinkle with salt.
  4. Place in Drawer 1 and set to 200°C for 35 minutes.
  5. Toss mushrooms with olive oil, garlic, salt, and pepper.
  6. Place in Drawer 2 and set to 200°C for 15 minutes.
  7. In the last 2 minutes, add spinach to wilt.
  8. Select SyncFinish so the 2 x drawers finish together
