Vegan Apricot Sorbet

This refreshing Apricot Sorbet can be made with just a few ingredients and is the perfect dessert for a summer’s day. It’s a healthier option to ice cream and it’s vegan too.

Ingredients:

  • 500g fresh apricot pulp
  • 300g vegan yoghurt
  • 3 tbsp. agave syrup
  • Juice of half a lemon

Directions:

  1. Place the gelato paddle in the bowl of the ice cream maker.
  2. Pour the apricot pulp into the bowl.
  3. Add the yoghurt, honey and lemon juice.
  4. Process the sorbet for 30 minutes.
  5. Arrange in bowls and serve immediately.
