Vegan Apple Pudding

Our Apple Pudding (Tatin Style) is the perfect after-dinner treat. It’s also completely dairy free, making it a great vegan option too.

Ingredients:

  • 5 organic apples
  • 40g coconut oil
  • 50g brown sugar
  • 300g plain flour
  • 120g coconut sugar
  • 1 sachet baking powder
  • A pinch of salt
  • 200g apple sauce
  • 170ml vegetable milk
  • 100ml vegetable oil

Directions:

  1. Peel, core and cut the apples into wedges.
  2. Place the cooking pan on the Cook In and set the temperature to medium.
  3. Using the brown sugar and coconut oil, make a caramel in the pan.
  4. Add the apple wedges to the pan and cover with the lid. Cook the apples for 1 minute and turn the apples over. Cook for another minute and then switch the Cook In off.
  5. Pour the flour, coconut sugar, baking powder and salt into a mixing bowl and mix well, to combine the ingredients.
  6. Add the apple sauce, vegetable milk and vegetable oil and mix into a smooth batter.
  7. Pour the batter over the caramelized apples and replace the lid.
  8. Set the Cook In to a low heat and bake for 35 minutes, with the lid on.
  9. Once cooked, leave to cook down and turn out onto a dish.
