Tofu and Chickpea Curry

Tofu and Chickpea Curry

Tofu & Chickpea Curry is a delicious vegetarian dish, which is full of flavour and high in protein. Easy to make, it can be ready in under an hour. Recipe created by @myhungrylittlehelpers.

Ingredients:

  • 1-2 tbsp. oil, for cooking
  • 1 block extra firm tofu, chopped into cubes
  • 1 onion, diced
  • 1 large garlic clove, chopped
  • ½ tsp. ginger paste
  • 1 tsp. curry powder
  • ½ tsp. ground coriander
  • 1 tsp. ground turmeric
  • 400g tin chickpeas, drained
  • 400ml tin coconut milk
  • 1 low salt vegetable stock cube
  • 1 large handful of spinach, chopped
  • Salt and pepper to taste

To Serve:

  • Rice
  • Fresh salad

Directions:

  1. Place the grill pan onto the Cook In and set the temperature to medium. Brush the grilling pan with a little oil.
  2. Fry the tofu, on the grill pan, for 5 minutes, turning so that the pieces begin to turn golden evenly. Set aside.
  3. Using the oven gloves, carefully remove the grill pan and place on a heat resistant surface.
  4. Place the cooking pan onto the Cook In and set the temperature to medium. Brush the cooking pan with a little oil.
  5. Add the onion to the cooking pan and gently fry for a few minutes. Once the onion has softened, add the garlic and ginger and continue to fry for another minute. Add the curry powder, coriander, cumin and turmeric. Stir to combine everything together.
  6. Add the grilled tofu and chickpeas, cooking these in the spices for 5 minutes. Pour in the coconut milk and crumble in the stock cube. Mix everything together, turn the temperature down a little and place the lid on. Allow to simmer for approximately 10 minutes, stirring occasionally.
  7. Stir through the chopped spinach and cook for a further couple of minutes, until the spinach has wilted. Season to taste.
  8. Serve with rice and a crisp salad.
