Toasted Sandwich

Toasted Sandwiches are quick and easy to make and are a tasty lunch option, especially for kids. This simple recipe makes a delicious Pesto, Mozzarella and Ham Toasty, or you can try out your own fillings and opt for a veggie version.


  • 4 slices sourdough bread
  • Olive oil
  • 80g pesto
  • 125g mozzarella ball, cut into 8 slices
  • 4 slices ham
  • 6 sun-dried tomatoes, sliced in half lengthways
  • 2 handfuls rocket


  1. Preheat the grill to 'HIGH’.
  2. Oil 1 side of each of the 4 slices on bread, with the olive oil. Turn over so the oiled surface is facing down.
  3. Spread a generous layer of pesto on the bottom 2 slices of bread. Top with the sliced mozzarella, followed by the ham, sun-dried tomatoes and the rocket. Finally top with a few dollops of pesto. Place the remaining 2 slices of bread (olive oil side up), to finish the sandwich.
  4. Place both sandwiches onto the grill plates and close the lid. Cook for 5 minutes or until golden brown.
