Sweet Waffles with Honey Roasted Peaches

Sweet Waffles with Honey Roasted Peaches are the perfect, homemade sweet treat. Easy to make, they are ideal for either brunch or for a dessert.

Ingredients:

For the Roasted Peaches:

  • 3 peaches
  • 3 tbsp. honey

For the Waffles:

  • 250g plain flour
  • 1 tbsp. caster sugar
  • 1 tbsp. baking powder
  • 1 tsp. salt
  • 400ml semi skimmed milk
  • 3 medium eggs
  • 30ml vegetable oil

To Serve:

  • 200ml raspberry coulis
  • 60g flaked almonds, toasted
  • 120g fresh raspberries
  • Vanilla ice cream

Directions:

  1. Pre-heat the oven to 220˚C.
  2. Cut the peaches in half and remove the stones. Place on a baking tray, cut side up.
  3. Drizzle the honey over and bake for approximately 15 minutes, until starting to collapse.
  4. Cool on a wire rack.
  5. Insert the waffle plates and preheat the Waffle & Pancake Maker to medium.
  6. Place all the waffle ingredients into a mixing bowl and mix until you have a smooth batter.
  7. Leave to rest for 5 minutes.
  8. When the green indicator light shows, pour approximately 60ml of batter into each waffle plate. Gently spread the batter into the plates and cook for 3 - 3½ minutes. Remove and repeat with the remaining batter.
  9. To serve, place two waffles on each plate and drizzle with raspberry coulis.
  10. Cut the peaches in quarters and place on the plate.
  11. Scoop the ice cream on the side, scatter the raspberries and sprinkle with flaked almonds.
