Stuffed Tomatoes

Stuffed Tomatoes, with sausage meat, are the perfect midday snack. They are super easy to make and can even be prepped ahead of time.

Ingredients:

  • 6 ripe tomatoes
  • 600g sausage meat
  • 50g dry breadcrumbs
  • 5 parsley sprigs
  • 4 garlic cloves
  • 1 red onion
  • 6 sage leaves
  • 6 rosemary sprigs
  • 6 fresh thyme sprigs
  • 100g rice
  • 50ml olive oil
  • Salt and freshly ground pepper

Directions:

  1. Mix together the breadcrumbs, garlic and parsley in the Mini Prep Pro.
  2. Pour half the mixture into the sausage meat and set the rest aside.
  3. Using the Mini Prep Pro, blend together the onion and sage. Pour the mixture into the breadcrumbs. Season well and mix together.
  4. Cut the tops off the tomatoes and set them aside.
  5. Hollow the tomatoes out and put the pulp into the Mini Prep Pro. Season and blend the pulp into a coulis.
  6. Stuff the hollowed tomatoes with the sausage meat filling. Sprinkle over the remaining breadcrumb mix and place the tomato tops on each one.
  7. Pour the tomato coulis into a baking dish and mix in the rice.
  8. Place the tomatoes in the dish, drizzle over the olive oil and sprinkle with thyme and rosemary.
  9. Bake for 40 minutes at 190˚C.
  10. Serve piping hot.
