Steamed Stuffed Butternut Squash with Chicken & Vegetables

Stuffed Butternut Squash pairs excellently with chicken, walnuts, ricotta, mushrooms and is a delicious lunchtime meal. You can adapt this recipe, if you are a vegetarian, by simply removing the chicken.

Ingredients:

  • 1 butternut squash, approx. 1kg
  • 100g button mushrooms, sliced
  • 80g cooked chestnuts, crushed
  • 80g walnut kernels
  • 100g chicken breast, diced
  • 1 tbsp. hazelnut powder
  • 1 shallot, chopped
  • 1 bunch of chives, chopped
  • 1 tbsp. pumpkin seeds
  • 50g fresh ricotta cheese
  • 1 piece of parmesan cheese, grated
  • Salt and freshly ground pepper

Directions:

  1. Cut the butternut squash in half and remove the seeds.
  2. Place both halves in the Cookfresh Steamer and steam for 25 minutes.
  3. Once steamed, remove some of the flesh from the butternut squash and mix with the mushrooms, chestnuts, walnuts, chicken, hazelnut powder, shallot and about half of the chives. Then season well with salt and pepper.
  4. Add the stuffing mix to each half of the butternut squash.
  5. Place both halves of the butternut squash back into the Cookfresh Steamer and steam for 15 minutes.
  6. Top each half with the ricotta cheese, grated parmesan cheese and the rest of the chives.
  7. Serve with a chicory salad.
