Strawberry & Bourbon Vanilla Fruit Coulis

Strawberry and Bourbon Vanilla Fruit Coulis is delicious and the mixture of fresh fruit and sweet coulis pairs perfectly together. Try this simple recipe for a light, fruity dessert, that is perfect for the summertime.


  • 300g strawberries
  • 200ml double cream
  • 30g icing sugar
  • 1 bourbon vanilla pod
  • 100g raspberries
  • 6 dry biscuits, of your choice

To Serve:

  • Spring of mint
  • Vanilla pods


  1. Pour the cream into the blending cup.
  2. Split the vanilla pod in half. Scrape out the seeds and add the seeds to the cream.
  3. Attached the blade assembly and shake.
  4. Place the bowl in the freezer for about 20 minutes.
  5. Wash and quarter the strawberries and then set aside.
  6. Blend the cream for about 15 seconds. Then add the icing sugar and blend again for about 10 seconds, whilst shaking the blender.
  7. Set the whipped cream aside, in a cool place.
  8. Wash up the blending cup and then add the raspberries and 50g of the strawberries. Blend together until you have a puree.
  9. Place the quartered strawberries into bowls. Add the whipped cream on top, followed by the fruit coulis.
  10. Place the biscuits on top.
  11. Add a sprig of mint and a piece of vanilla, for decoration.
  12. Serve immediately.
