Steamed Mackerel and Fennel

Mackerel is a great source of Omega-3 oils and tastes delicious with fresh oranges. So if you're on a health kick, or just want some delicious dinner, this recipe is perfect for you!

Ingredients:

  • 6 mackerel fillets
  • 2 fennel bulbs, chopped
  • 3 oranges
  • 1 piece of ginger, grated
  • 1 tsp. pink berries
  • 300ml white wine
  • 50ml olive oil
  • Salt & freshly ground pepper

Directions:

  1. Grate the zest of 2 oranges and set aside.
  2. Peel the oranges and remove the segments.
  3. Add the chopped fennel to the dish of the CookFresh Steamer, before adding the orange zest, pink berries and grated ginger.
  4. Place the mackerel fillets on top of the fennel and drizzle with olive oil.
  5. Season well with salt and pepper.
  6. Add the white wine to the water tank and cook for 5 minutes, using the ‘fish’ mode.
  7. Add in the orange wedges and drizzle with a little more olive oil.
  8. Serve immediately.
