Spicy Chicken Samosas

These home-made Spicy Chicken Samosas are quick and easy to make and are perfect to have as a quick snack, or to serve at a dinner party with friends.

Ingredients:

  • 200g cooked chicken
  • 1 potato
  • 1 carrot
  • 1 onion
  • 50g pitted dates
  • 50g roasted peanuts
  • 1 tsp. ras el-hanout
  • 1 bunch fresh coriander
  • 1 egg
  • Salt and pepper
  • 10 sheets of filo pastry
  • 200ml olive oil

Directions:

  1. Pre-heat the oven to 180˚C.
  2. Add the cooked chicken to the Mini Prep Pro and chop into smaller pieces and set aside.
  3. Then chop the onion, dates and coriander in the Mini Prep Pro. Add this to the chicken and mix well.
  4. Grate the potato and the carrot and add to the chicken mixture.
  5. Then add the eggs, peanuts and ras el-hanout and mix everything together well. Season to taste.
  6. Brush the pastry sheets with the olive oil and cut into 6cm strips.
  7. Put some of the stuffing on top of the pastry strip and fold into a triangle. Repeat this process until all the mixture has been used.
  8. Place all the samosas onto a baking tray and bake for 20 minutes.

Tip: Leftover roast chicken is perfect for this recipe.
