Spicy Chicken Samosas

These home-made Spicy Chicken Samosas are quick and easy to make and are perfect to have as a quick snack, or to serve at a dinner party with friends.
Ingredients
- 200g cooked chicken
- 1 potato
- 1 carrot
- 1 onion
- 50g pitted dates
- 50g roasted peanuts
- 1 tsp. ras el-hanout
- 1 bunch fresh coriander
- 1 egg
- Salt and pepper
- 10 sheets of filo pastry
- 200ml olive oil
Preparation
- Pre-heat the oven to 180˚C.
- Add the cooked chicken to the Mini Prep Pro and chop into smaller pieces and set aside.
- Then chop the onion, dates and coriander in the Mini Prep Pro. Add this to the chicken and mix well.
- Grate the potato and the carrot and add to the chicken mixture.
- Then add the eggs, peanuts and ras el-hanout and mix everything together well. Season to taste.
- Brush the pastry sheets with the olive oil and cut into 6cm strips.
- Put some of the stuffing on top of the pastry strip and fold into a triangle. Repeat this process until all the mixture has been used.
- Place all the samosas onto a baking tray and bake for 20 minutes.
Tip: Leftover roast chicken is perfect for this recipe.
