Soy & Miso Grilled Salmon with Lime & Sesame Broccoli

Ingredients:

  • 1 Responsibly sourced salmon steak
  • 1 Miso paste sachet - available at all large supermarkets
  • 2 tbsp Dark soy sauce
  • A handful of broccolini
  • 1 tsp Sesame oil
  • Black sesame seeds
  • Juice of 1/2 a lime

Directions:

  1. Marinate the salmon in the miso and soy sauce for a good hour or two before cooking to infuse with lots of flavour.
  2. To cook, attach the grill plates and turn heat to medium - high. Once hot, spray or brush the plates with oil and lay the salmon down at an angle. Close the machine and cook for between 5-8 minutes depending on the thickness of your salmon steak.
  3. Once cooked but still a little underdone in the middle remove the salmon from the plates, wrap in foil and set aside to rest whilst you cook the broccolini. The residual heat will continue to cook the fish until the broccoli is ready.
  4. Brush the broccolini with sesame oil and place onto the grill. Keep the grill open and grill for 3 minutes on either side. Grab your lime and squeeze the juice on the plates. It will sizzle but that’s ok, then simply close the machine and cook for a further minute.
  5. Unwrap the Salmon. If still looking slightly underdone, return to the grill for a final few minutes until cooked through.
  6. To serve, lay the salmon over the broccoli and sprinkle with black sesame seeds.
