Smooth Vegetable Soup

Try this quick and easy Vegetable Soup recipe, to create a delicious, smooth soup for lunch or supper.

Ingredients

  • 2 cloves garlic 
  • 1 medium onion 
  • 1 parsnip 
  • 1 large carrot 
  • 1 leek 
  • 100g peas (fresh or frozen) 
  • 1 teaspoon salt 
  • 1L vegetable stock  

Preparation

  1. Prepare the Aromatics: Start by grinding the garlic and onion into a paste using the small bowl of an easy prep pro. Sauté the paste in a pan over medium heat for 3-5 minutes until fragrant and golden. 
  2. Prepare the Vegetables: Use the easy prep pro with the slicing and dicing discs or blades to quickly chop the parsnip, carrot, and leek into small, uniform pieces. Add the sliced vegetables and peas to the pan with the garlic-onion paste. Stir and cook for 2-3 minutes to blend the flavors. 
  3. Simmer the Soup: Add the vegetable stock and salt, then bring to a simmer. Lower the heat and cook uncovered for 25-30 minutes, or until the vegetables are tender. 
  4. Blend the Soup: Once the vegetables are soft, transfer the mixture to the easy prep pro or use an immersion blender. Blend until smooth and creamy, adjusting consistency with extra stock if needed. 
  5. Finish and Serve Enjoy your smooth, flavourful vegetable soup!
