Smoked Salmon Omelette

Easy to make and full of protein, this smoked salmon omelette is perfect for a special breakfast or a quick and healthy, light lunch option.

Ingredients:

  • 4 large eggs
  • Salt and ground black pepper
  • Handful of chopped parsley
  • 20g butter
  • 60g cheddar cheese, grated
  • 60g smoked salmon
  • 2 spring onions, sliced
  • Handful of chopped chives (optional)

Directions:

  1. Attach the SANDWICH plates to the 2 in 1 Grill and Sandwich Maker. Preheat to HIGH.
  2. Beat the eggs and salt and pepper in a bowl. Add the parsley and beat really well (the more you beat, the more air you get into the omelette).
  3. Melt the butter in each pocket of the Sandwich Maker and rub a little of the melted butter onto the top plates.
  4. Pour the egg mixture into each pocket, just to the top of the pocket.
  5. Divide the smoked salmon between each omelette, followed by the grated cheese and spring onions.
  6. Close the lid and cook for 3 to 4 minutes.
  7. Serve scattered with chopped chives.
