Ingredients
- 100g flat leaf parsley
- 2 spring onions
- 2 cloves of garlic
- 1 green chilli
- ½ tsp dried oregano
- 2 tbsp red wine vinegar
- 150ml olive oil
- Salt and pepper to taste
Preparation
- Roughly chop the spring onions
- Peel the garlic
- Deseed the chilli and roughly chop
- Cut the hard stalks away from the parsley leaves
- Place the garlic, spring onion, green chilli and oregano in the mini chopper and pulse a few times until finely chopped
- Add the herbs, pulsing again until chopped
- Pour in the red wine vinegar and olive oil and pulse again until everything is combined
- Taste to season with salt and pepper
- Serve with grilled vegetables
