Ingredients

  • 100g flat leaf parsley
  • 2 spring onions
  • 2 cloves of garlic
  • 1 green chilli
  • ½ tsp dried oregano
  • 2 tbsp red wine vinegar
  • 150ml olive oil
  • Salt and pepper to taste

Preparation

  1. Roughly chop the spring onions
  2. Peel the garlic
  3. Deseed the chilli and roughly chop
  4. Cut the hard stalks away from the parsley leaves
  5. Place the garlic, spring onion, green chilli and oregano in the mini chopper and pulse a few times until finely chopped
  6. Add the herbs, pulsing again until chopped
  7. Pour in the red wine vinegar and olive oil and pulse again until everything is combined
  8. Taste to season with salt and pepper
  9. Serve with grilled vegetables
